Feeding The Family

Warming Tasty Soup :

Serves – 4
Prep Time – 10 mins
Cooking time – 50 - 60mins
Approx cost - £1.50

Ingredients

2 oxo cubes
2/3 pint of water
Vegetables
Corn beef



Method

  • Make up a stock with a couple of oxo's and add to large saucepan, season to taste.
  • Chop up small what ever veg you have (1cm cubes ) and add to stock.
  • Cut up the unusual ingredient of a tin of corned beef, yes thats right corned beef! add to vegetables and top up saucepan with water and bring to boil, then reduce heat and simmer for about 1 hour.

  • This is a fabulous way to make beef soup it makes a hearty bowlful for a family of at least 4 with second helpings!
  • My growing boys would never have eaten this if they knew it was a tin of corned beef (yeuck!) but my Gran & Mother used to make soup in this way during and following the war, and it stuck as a family staple.
  • Corned beef can also be chopped small and used as an alternative to minced beef in spagettii bolognaise, again you would not know if you tasted it, and I would prefer to use corned beef than budget mince (with all that horrible fat!)again the boys never knew!
