Feeding The Family

Vegetable Pie :

Serves – 4
Prep Time – 10 mins
Cooking time – 60 mins
Approx cost - £3.50

Ingredients

1 tablespoon oil
1 onion, chopped
1 red or yellow pepper, chopped
2 carrots, grated
2 tablespoons of tomato puree
2 x 400g tins of chopped tomatoes
Pinch of dried or fresh herbs (mixed herbs, basil or oregano)
1 x 200g can of sweetcorn, drained
1 x 400g can of beans (whatever you have in stock, haricot, black eyed, red kidney)
5 large potatoes, mashed
Grated cheese (optional)



Method

  • Preheat oven at about 180°C/350°F/Gas 4
  • Fry onion and pepper in the oil for 2 minutes, add the carrot, then tomato puree and cook for a couple more minutes.
  • Add tomatoes and herbs and bring to the boil, add the sweetcorn and beans and simmer for around 10 minutes.
  • Transfer to a casserole dish and top with the mashed potato and top with grated cheese if using. Put in the oven for about 30 minutes or until cheese is lightly browned and bubbling.
