Heat the oil in a medium sized saucepan over a moderate heat and brown the minced beef
Add the garlic, onion, carrots and celery, and cook until the vegetables are softened, but not browned. (about 15 minutes).
Add the chopped tomatoes, puree, beef stock, water or red wine and stir until the ingredients are mixed well.
Reduce the heat and cook until the carrots and celery are soft to the bite which should take about 60 - 90 minutes.
From time to time stir all the ingredients.
Cook the pasta according to the instructions on the packet. Drain and serve with the bolognese sauce.
