Feeding The Family

Lasagne:

Serves – 4
Prep Time – 15 minutes
Cooking time – 35 minutes

Ingredients

500g minced beef
40g medium cheddar cheese
1 onion
2 courgettes
500g tomato and chilli sauce
250g egg lasagne
5 mushrooms sliced



Method

  • Pre-heat the oven to a temperature of 180 degrees C (360 degrees F).
  • Heat 1 tablespoon of olive oil in a pan and cook the peeled and chopped onion for roughly 5 minutes, add the sliced mushrooms and the mince and fry for 5 minutes until it browns.
  • Stir in 1 tablespoon of chilli powder and add the contents of the tomato and chilli jar, season and simmer for 20 minutes.
  • Whilst you are waiting for the mince to cook make the white sauce by melting 20 g butter in a saucepan and stir in 30g plain white flour and cook for 1 minute, remove from the hob and gradually whisk in 500ml semi-skimmed milk until the mixture becomes nice and smooth. Return the pan to the hob and bring to the boil, ensuring you continue to stir the mixture so that it stays smooth. Alternatively you can use a jar of béchamel sauce.
  • Remove the pan from the hob again, season with salt and pepper and stir in 20g of grated cheddar cheese until it melts.
  • Place half the mince into a baking dish and cover with three sheets of lasagne and pour the white sauce over the top, place the rest of the mince on top of this, place three more sheets of lasagne on top and pour the remainder of the white sauce over it.
  • Sprinkle over the top the rest of the cheddar cheese and cook for 3 minutes in the pre-heated oven until bubbling and golden brown.
  • While you're waiting for the lasagne to cook steam the chopped courgettes and serve with the lasagne, otherwise a salad can be a lovely alternative.
