Chicken / Turkey Dinner Soup :

Cooking time – 1hr - 1hr 10mins

Ingredients

Chicken / Turkey
Left Over Veg / Seasonal Veg
Salt & Pepper
Other Seasoning of choice



Method

  • Delicious cheap family meal, ideal for a Monday.
  • Following your Sunday roast, place the chicken carcass in a large saucepan with all the above ingredients, bar the left over veg and fresh veg.
  • Bring carcass to the boil and simmer for 20 mins ( this removes all the meat from the bones)
  • Remove carcass and place in a sieve over a plate.
  • When cool, remove all the meat from the bones. The bird should yield a lot of meat.
  • Remember to remove all the meat from the underside and wings of the bird.
  • Place meat back into the saucapan and add the leftover veg/stuffing/gravy/cranberry suace etc you have or add potatoes, carrots, swede or any other veg of your choice.
  • Optional - blend to a smooth consistency or leave it chunky.
  • Serve with chunks of bread and cheese.
  • To make this dish go further, soak "soup mix" (dried peas, lentils, pearl barley - available in supermarkets) overnight and add at the same time as the veg. Make sure you bring it to the boil and simmer for half an hour.
  • Cook until veg is soft
