Feeding The Family

All In One Vegetable Soup :

Serves – 4
Prep Time – 5 mins
Cooking time – 10 - 20mins
Approx cost - £1.00

Ingredients

Half a bag of spinach
2 x 420g mixed pulses
Carrots
Tablespoon of Pesto
Vegetable Stock
Tin of Chopped Tomatoes
Crusty Bread



Method

  • Put stock and tomatoes in saucepan and boil
  • Turn down heat and add chopped carrots
  • Simmer until carrots are cooked.
  • Stir in rinsed pulses and spinach
  • Heat until spinach has wilted
  • Spoon in the pesto and gently mix into the soup
  • Serve with crusty bread
